LAFAYETTE, La. (The Advertiser)- Viva La Waffle — a once-beloved food truck in Lafayette — is officially opening its brick-and-mortar restaurant on Wednesday, the eatery announced on Facebook.
The restaurant will open at 10:30 a.m. for drive thru service only.
Years after the food truck ceased operations, Viva La Waffle announced in September that it would be returning via an ominous and dramatic video. The video had more than 400 comments and 600 shares on the restaurant’s Facebook page.
The food truck specialized in sweet and savory waffles, such as the Rosceaux (buttermilk fried chicken with a spicy honey drizzle), the Figgy Piggy (local fig preserves, prosciutto, goat cheese and arugula), and the Buffalo (a fried chicken breast tossed in buffalo sauce, blue cheese crumbles and celery salt), among others.
